Keto or Carnivore Cheesecake Recipe

One of my favorite desserts that I enjoy the most is Cheesecake.  I love the creamy custardy filling, the crust and savoring every single bite but...

For those of us who choose to eat a low carb diet you probably miss these types of desserts and it can be very difficult to manage those cravings for sweets.  But did you know that one of the low carb foods you can have is Cream Cheese?    You can still eat that cheesecake with just a few adjustments.    

This Cheesecake also has two versions.  If you are Keto and can eat Artificial Sweeteners and Almonds you will love this version.  If you are Carnivore and only eat Animal products...well I have a version for that too.

Some Tips for Keto/Carnivore Cheesecake:

💖You will need to soften your Cream Cheese.  I take the cheese out of the package and leave it out on the counter to soften.  It usually takes about half an hour or so.  If it isn't that soft after 30 minutes I place it in my stand mixer or you can use a hand mixer.  I will put the heavy cream in it and mix the two together until smooth.  Then add the rest of your ingredients as written.

💖One other item I put in my Cheesecake is Sugar-Free White Chocolate Chips.  This is optional but I wanted to let you know that if you do add them I suggest sprinkling them on top of the cake before you bake it.  I have found that when adding them in the batter the chips tend to sink to the bottom instead of suspending within the filling.

Keto Cheesecake



Cheesecake Filling-


2 (8oz packages) Full Fat Cream Cheese - softened
1/3 cup Heavy Cream
3 Eggs
1 Teaspoon Vanilla
1/2 Cup Sour Cream
1/2 - 1 cup equivalent Artificial Sweetener of choice to taste
1/4 cup White or Chocolate Chips (Optional)

Cheesecake Crust-


1 1/2 Cup Superfine Almond Flour
Dash of Salt
1 Teaspoon Cinnamon (Optional)
7 Tablespoons Butter (melted)
2 Teaspoons Artificial Sweetener


Make Crust and press into the bottom of a 9 inch Springform pan.  Poor filling over crust and bake at 335 Degrees for about 30-40 minutes depending on your oven temperature as some oven temperatures will vary.  Remove from oven when cake is set but still has a slight jiggle in the center.  Cool for 30-60 minutes then chill for 5 hours in refrigerator or overnight.


Carnivore Cheesecake

 

2 (8oz packages) Cream Cheese - softened
1/3 cup Heavy Cream 3 Eggs 1 Teaspoon Vanilla (optional) 1/2 Cup Sour Cream Stevia (optional) Poor into a 9 inch Springform pan and bake at 335 Degrees for about 25-35 minutes. Some Oven temperatures will vary.
Remove from oven when cake is set but still has a slight jiggle in the center. Cool for 30-60 minutes then chill for 5 hours in refrigerator or overnight.
